Foodie Friday -- Sunshine S'mores

I'm sure when most of us think of S'mores, we think of camping.  Cooking marshmallows over an open fire until they catch on fire and then smashing them between layers of chocolate and graham crackers.  Here is a little kid-friendly twist to an old favorite.


Sunshine S'mores
  • graham cracker squares
  • large marshmallows
  • chocolate chips
  1. In a glass baking dish with a lid arrange graham cracker squares in one layer.
  2. Use scissors dipped in water to cut marshmallows in half horizontally.
  3. Place one marshmallow half, cut side up, on each graham cracker square and top with chocolate chips.
  4. Put the lid on the baking dish and place the dish outdoors in direct sunlight.
  5. Check periodically. When marshmallows and chocolate chips are melted eat and enjoy.
*  This recipe works best when it is 85 F or hotter outside.

**  If you have already told your kids what you are going to do and they think you are the coolest mom in the world, and then you pull everything out and suddenly realize that you have every kind of chip but chocolate, say a little prayer.  Then your friend will bring you brownies that you can crumble up and use instead of the chocolate chips and your kids will think you are cool again.  :)

I LOVE smores! I know you use marshmallow a lot in your recipes... do you know where I might find sugar free marshmallows? Do they even exist?

Wish we didn't just eat all our graham crackers! What a great idea. My boys will love it.
